DOSA

 VEGETABLE DOSA
vegetable dosa 

    IDLY RICE - 1CUP  , UDAL DAL - 1/4 CUP + METHI (10) == SOAK THESE SEPARATELY FOR 3 HOURS ,GRIND WELL ,ADD SALT ,BEET WELL, WAIT FOR 12 HOURS
       In heat dosa kadai ,  put as usual dosa , but little thicker 
     then add needed vegetables in finely chopped manner ,  springle chilli powder (dosai chilli powder ) and pour oil in it     

CHANNA DOSAI (கொண்டைக்கடலை தோசை) 
         Soak 1 cup white channa over night -a
I cup idly rice + 1/4  urad dal + fenugreek (10) - soak over night - b
         Now blend everything  , with ginger, g. Chilli, cumin seeds and salt - c
  Mix together and allow for fermentation, then add normal dosai flour - 1 cup  , then mix everything 
   Then prepare dosai and taste it with any chutney


            
GREEN GRAM DOSAI
             Idly rice ( 1/2 cup)  , green gram dal (3/4 cup)  , urad dal( 1/4 cup) + fenugreek( 10)  - soak everything for 4 hours and blend finely with needed salt
          Allow to ferment for 8 hours 
Then prepare dosai and taste it with chilli and garlic chutneys


CURRY DOSAI
               TAKE SPICY CHICKEN OR MUTTON  FRY, CHOPPED IT FINELY - ADD INSIDE DOSA FLOUR 
          KEEP IT ASIDE FOR 5 MIN, THEN PUT AS UTHAPPAM FORM


PODI DOSA
       
 UDAL DAL - 1/4 CUP + METHI (10) == SOAK THESE SEPARATELY FOR 3 HOURS ,GRIND WELL ,ADD SALT ,BEET WELL, WAIT FOR 12 HOURS
       In hot dosa kadai ,  put as usual dosa , but little thinner 
       When dosa half boiled sprinkle idly CHILLI PODI 
     And sprinkle oil in it 







GHEE DOSA 
            IDLY RICE - 1CUP  , UDAL DAL - 1/4 CUP + METHI (10) 
      SOAK THESE SEPARATELY FOR 3 HOURS ,GRIND WELL ,ADD SALT ,BEET WELL, WAIT FOR 12 HOURS
       In heat dosa kadai ,  put as usual dosa , but little thin
  once dosai half cooked spread ghee nicely on entire dosa

            




BLACK DOSA
            ONE CUP RED RICE - SOAK FOR 2 HOURS -A
 WITH A ADD THUTHUVALAI LEAVES , ANISE (1s) , R.CHIILI(4) , S.ONION (3) , GRATED COCONUT ---BLEND EVERYTHING TOGATHER WITH SALT 
                   THEN PREPARE AS DOSA IMMEDITELY -NO NEED FOR FERMENTATON


OATS DOSA
        UDAL DAL - 1/4 CUP + METHI (10)--- SOAK THESE SEPARATELY FOR 3 HOURS ,GRIND WELL ,ADD SALT ,BEET WELL, WAIT FOR 12 HOURS --A
       Soak oats in hot water for 5 minutes and blend with little salt --B
     Now take B (2 cups ) + A(1 cups) --blend for few seconds---C
     Now take C in a bowl add chopped coriander leaves and chopped green CHILLI --gently mix , after 30 minutes  
     Prepare a normal dosa , without oil also ,  it sounds good 

       


ONION DOSA

            IDLY RICE - 1CUP  , UDAL DAL - 1/4 CUP + METHI (10)-- SOAK THESE SEPARATELY FOR 3 HOURS ,GRIND WELL ,ADD SALT ,BEET WELL, WAIT FOR 12 HOURS
       In heat dosa kadai ,  put as usual dosa , 
                       spread CHOPPED ONION  in it 
 if needed  add some species as pepper  powder or idly podi      
   












EGG DOSA

          IDLY RICE - 1CUP  , UDAL DAL - 1/4 CUP + METHI (10) == SOAK THESE SEPARATELY FOR 3 HOURS ,GRIND WELL ,ADD SALT ,BEET WELL, WAIT FOR 12 HOURS
       In heat dosa kadai ,  put as usual dosa , 
                       spread egg in it 
 if needed  add some species as pepper  powder or idly podi      






 PLAIN DOSA
DOSA
  IDLY RICE - 1CUP  , UDAL DAL - 1/4 CUP + METHI (10)---------------SOAK THESE SEPARATELY FOR 3 HOURS ,--------------- GRIND WELL ,ADD SALT , BEET WELL, WAIT FOR 12 HOURS             
    THEN PUT THE FLOUR IN  PAN ---- FLOUR SHOULD BE VERY LIGHT , SEMI LIQUID FORM,

       PREPARE AS USUAL DOSAI (LITTLE THICKER ) ADD EGG , NEEDED VEGETABLE , CHEESE , CHILLI SAUCE AND TOMATO SAUCE --ONCE EVRYTHING BOILS , FOLD IT AND CUT IN REQUIRED SHAPE

             TAKE 1 CUP DOSA FLOUR  , PUT THE FLOUR IN DOSA PAN IN REQUIRED SHAPE , SPRINGLE NEEDED VEGETABLES , THEN ADD MORE CHEESE, WHEN DOSA BOILS TASTE IT
