KOLLUKATTAI

KAMBU KOLLUKATTAI
            HEAT A EMPTY KADAI AND ROAST KAMBU FLOUR UNTIL AROMA  COMES -A
                WITH A ADD GRATED COCONUT ,POWDERED JAGGERY , GHEE (little) , SALT (pinch) , 
 SESAME (optional) -Mix everything with normal water
           AND PREPARE REQUIRED SHAPES AND STEM FOR 15 MINUTES
           
 
AVAL KOLLUKATTAI
        DRY ROAST RED AVAL AND BLEND AS COURSE -A
          IN A SPINKLE SOME WARM WATER AND SOAK FOR 15 MINUTES -B
            THEN PREPARE JAGGERY SYRUB , IN THAT ADD B , GRATED COCONUT , CARDAMON AND DRY GINGER POWDER AND MIX TOGATHER - C 
       REMOVE FROM STOVE , ONCE HEAT REDUCES , APPLY LITTLE GHEE IN HAND AND PREPARE REQUIRED SHAPE AND STEAM FOR 10 MINUTES

FIVE FLOUR MOTHAGAM
  MAPILLAI SAMBA FLOUR -1CUP
  RICE FLOUR -1 CUP
  RAGI FLOUR -1CUP
  MIX MILLED FLOUR -1CUP
  RED RICE FLOUR - 1 CUP
  POWDERED JAGGERY - 2 &1/2 CUP 
  SALT - 1 PINCH
  GRATED COCONUT - 1 CUP
  GHEE - 1 SPOON
               - MIX EVERYTHING WITH NORMAL WATER, PREPARE REQUIRED SHAPES, STEM FOR 10 MINUTES

                ROAST RAVA(1 cup)  IN DRY HOT PAN -A
       MAKE JAGGERY POWDER DISSOLVE IN WATER (2cup) AND ALLOW TO BOIL -B
             WHILE BOILING ADD CARDAMON POWDER(1s) ,     HALF BOILED MOONG DAL(2s) , CHOPPED COCONUT (2s) , ROASTED SESAME SEEDS ,  SALT(1pinch) -  AFTER FEW MINUTES ADD A WITH IT -AND MIX UNTIL IT GETS THICK -C-off the stove
               WAIT UNTIL HEAT REDUCES FROM C
THEN PREPARE REQUIRED SHAPES AND STEAM IT 

OATS KOLLUKOTTAI
            OATS (1cup ), RICE FLOUR (3s) , Needed jaggery powder , grated coconut , ghee (1s) --mix everything with warm water 
         Then keep aside for 10 minutes , the take flour in small balls , prepare in required shapes
             Stem it for 10 minutes , it gets nice aroma , switch off the stove 
     Taste it

           IDIYAPPAM FLOUR , SALT (1pinch) MIX BOTH WITH HOT WATER , THEN ADD NEEDED GRATED COCONUT AND POWDERED JAGGERY 
           MIX TOGETHER AND MAKE REQUIRED SHAPE AND STEAM FOR 15 TO 20 MIN

      HEAT A KADAI WITH LITTLE OIL , SEASON MUSTARD SEEDS , BENGAL GRAM , 
    THEN SAUTE , CHOPED
       S.ONION , G.CHILLI , CARROT , BEANS , CABBAGE, CAPSICUM 
        THEN ADD WATER WITH SALT , ONCE WATER STARTS BOILING ADD RAGI FLOUR , GRATED COCONUT , CORIANDER  LEAVES ---OFF THE STOVE AND MIX EVERYTHING TOGETHER
         AFTER HEAT REDUCES , 
 USING MOTHAGA MOULD , PREPARE THE SHAPES AND STEM IT FOR FIVE MINUTES

      In a empty vessel add powdered jaggery (100g) with little water , then heat it , when it started boiling add mashed boiled Bengal gram dal ( 100g) ,  grated coconut (1cup) ,  cardamom powder --mix everything , then off the stove after it became dry ---A
   In rice flour add hot water little by little , mix well with little salt --B
    Take B as small balls ,apply little oil in your hands , prepare required shapes  then stuff A in it ---- then steam it for 10 minutes

  Grated coconut , r.chilli, curry leaf ----finely blend it as powder (measurement upto  ur taste ) -----A
   Rice flour , sesame oil ( few drops ) , salt --mix well with warm water -- then make it as small shapes --steam it for 20 minutes ----B


      Heat little oil in a vessel , season mustard seeds add B , then A -- mix well until raw smell goes , then off the stove

TYPE 1 _Take 50 g rice flour , pinch of salt , hot water --mix everything , make small balls , then steam it ---A
    BoiL 100G moong dal , then mash it with spoon , add more water then let it boil , add  , mashed jaggery and sugar upto taste , when everything boils add pinch of cardamom powder , add A , then season some cashews and almonds in ghee  , when everything boils well and reaches little thick add coconut milk , allow for few minutes , off the stove
      Let balls soak for 30 minutes then taste it

TYPE 2_ paal kollokatai 
             SOAK RAW RICE FOR 30 MIN , THEN GRING IT FINELY -A
          BOIL COW MILK AND A WITH IT AND MIX ADDING LILLTE GHEE, ONCE THE FLOUR GETS THICK, OFF THE STOVE AND MAKE THE DOUGH AS TINY BALLS -B
            BOIL 2RD AND 3RD COCONUT MILK IN SIMMER ADD B IN IT, ONCE BALLS STARTS BOILING IT FLOAT UP, AT THE TIME ADD SOME MORE BALLS FOR BOILING 
         ADD NEEDED SUGAR OR JAGGERY FOR TASTE 
       KEEP EVERYTHING TO BOIL IN SIMMER UNTIL IT GETS THICK 
         ADD 1ST COCONUT MILK AND ALLOW FOR FEW MINUTES
 IF NEEDED ADD CARDAMON POWDER
  

RICE FLOUR PUDI KOLUKATAI

  ROASTED RICE FLOUR (1cup), GRATED COCONUT (1/2cup), ROASTED SESAME (1/2s) , JAGGERY SYRUB (1/2Ccup ) ,  CARDAMON POWDER , -- MIX EVERYTHING  ,                          MAKE IT AS REQUIRED SHAPE THEN STEAM IN IDLY PAN FOR 15 MIN

       Take 50 g rice flour , pinch of salt , hot water --mix everything and have a dough --A
                  Roast  moong dal(100g)and BoiL it  , then mash it with spoon , add more water then let it boil , add  , mashed jaggery and sugar upto taste , when everything boils add pinch of cardamom powder , add A in the form as ( place the dough in muruku maker and sequece in the boiling dal ) close the lid and allow it to boil for some time   , 
           then season some cashews and almonds in ghee  , when everything boils well and reaches little thick add coconut milk , allow for few minutes , off the stove

    Take B as small balls ,apply little oil in your hands , prepare MOTHAGAM shapes  then stuff A in it ---- then steam it for 10 minutes 
             the stuffing required to out taste , sweet or  spicy
