VEG SOUP

MURUGAI KEERAI SOUP
                SEQUENCE KEERAI FROM STEM, CLEAN AND KEEP _ 1 cup -A
             HEAT LITTLE GHEE IN A KADAI, SEASON -CUMIN, ANISE, CLOVE (2) ,  THEN SAUTE ONION, MASHED GARLIC, CHOPPED TOMATO, ADD  WATER, PEPPER POWDER, SALT - B
        ALLOW B TO BOIL FOR 10 MIN IN SIMMER, THEN ADD A - KEEP IN SIMMER S FOR ANOTHER 5-6 MIN 
       OFF THE STOVE, IF NEEDED ADD PEPPER POWDER AND SALT

         IN A EMPTY KADAI , ADD MUDAKATHAN LEAVES WITH LITTLE STEM , ADD CHOPPED S.ONION , GARLIC , TOMATO , TURMERIC POWDER , DHANYA POWDER (1/2 s) , FULL PEPPER , CUMIN SEEDS , ADD WATER (3 cups)
      THEN MIX EVERYTHING ,  ALLOW TO BOIL IN SIMMER , UNTIL WATER LEVEL DECREASES , THEN ADD FEW SILCED PIECES OF COCONUT
       THEN OFF THE STOVE , FILTER THE SOUP AND ADD NEEDED SALT AND PEPPER POWDER
     TASTE IT , WHEN HOT



CABBAGE SOUP
CABBAGE SOUP
        BOIL SOME WATER , ADD CHOPPED CABBAGE , B.ONION , GARLIC , GINGER , TOMATO , G.CHILLI (1)  , CUMIN  , FULL PEPPER  , SALT
   ALLOW EVERYTHING TO BOIL , ADD COCONUT MILK (1s) 
   IF NEEDED ADD FEW CARROT 
GARNISH WITH LITTLE CURRY LEAVES AND CORIANDER LEAVES
 
Mushroom with baby corn soup
          Clean mushroom s and blend once in blender -A
     Heat a kadai, add water, A, choped s. Onion, ginger + garlic paste, tamato (very little ) , salt -  allow to boil with  few baby  corn chopped 
         Allow to boil, once water level comes to half the portion 
           Then add pepper powder and corn flour ( mixed with water) - allow to boil for few minutes  , off the stove, add  few chopped corriander leaves



THUTHUVALAI  LEAVES SOUP
         IN A EMPTY KADAI , PUT TORN CUTTED THURHUVALAI LEAVES ,  ADD CHOPPED S.ONION , GARLIC , TOMATO , TURMERIC POWDER , DHANYA POWDER (1/2 s) , FULL PEPPER , CUMIN SEEDS , ADD WATER (3 cups)
      THEN MIX EVERYTHING ,  ALLOW TO BOIL IN SIMMER , UNTIL WATER LEVEL DECREASES , THEN ADD FEW SILCED PIECES OF COCONUT
       THEN OFF THE STOVE , FILTER THE SOUP AND ADD NEEDED SALT AND PEPPER POWDER
     TASTE IT , WHEN HOT

              BROCOLLI ,  CARROT , BABY CORN , CAULIFLOWER -CUT THESE IN SMALL SHAPES --MAKE IT TO BOIL FOR FEW MINUTES WITH HALF SALT--REMOVE THE VEGETABLES --A (ONLY WATER )
            BOIL RICE AND FILTER THE WATER ---B (ONLY DRAINED WATER )
  IN A ADD B , ADD , FINELY CHOPPED S.ONION (2) , G.CHILLI (1)  ,  MASHED GARLIC (2) , CHOPPED GINGER (little) , PEPPER POWDER (needed)  , SALT 
     IF NEEDED ADD CUMIN POWDER (1/2s) 
                   ALLOW EVERYTHING TO BOIL  FOR FEW MINUTES AND ADD MIX HERBS (1 pinch ) GARNISH WITH CORIANDER LEAVES

     CINNAMON 
     CLOVE
      CUMIN
      BLACK PEPPER
      GINGER
      GARLIC 
                MAKE EVERYTHING TO BOIL FOR 30 MIN , WHEN WATER LEVEL DECREASES TO ONE FOURTH TASTE WITH LITTLE SALT 
     IF NEEDED GARNISH WITH CORIANDE LEAVES
            







AGATHI KEERAI SOUP

   Clean agathi keerai and remove sticks in it -A
         make rice washed water to boil , add agathi keerai (1 cup ) , chopped s.onion (7) , mashed garlic(5) , pepper powder (1/4s) ,  cumin powder (1/4s)  , coconut paste (1s) 
       once keerai boils with these add salt (to taste) 
 and season it with mustard seeds and r.chillies (2)

         ADD         TURMERIC POWDER (1/4s)  , GINGER + GARLIC PASTE (1/2s) , SALT ,, PEPPER POWDER (1s) , CUMIN POWDER (2s) ,,
                -- WHEN ALL BOILS ADD COCONUT MILK (2s)  , ADD HEATED GHEE (1s) ---GARNISH WITH CORIANDER LEAFS ------------SERVE HOT
